Nut and Seed Bark

Serves 8
- 8 ounces baker’s dark chocolate
- ¼ cup chopped almonds
- ¼ cup pepitas
- ½ cup chopped freeze-dried strawberries
- 2 tablespoons chia seeds
- ⅛ teaspoon salt
Melt the chocolate in a double boiler over moderate heat, stirring occasionally. Once melted, reserve a bit of the almonds, pepitas, strawberries, and chia seeds for garnish, then fold in the remainder of those ingredients in the aforementioned order.
Pour the melted chocolate onto a piece of parchment paper. Spread the chocolate ¼-inch thick over the parchment. Sprinkle with salt, reserved nuts, seeds, and fruit. Once the chocolate has cooled and hardened, break it up into pieces with your hands or cut it using a knife.
Store in a cool place to prevent melting.
